With so many delightful, delicious fruits and vegetables available this time of year, I decided to incorporate a few of them into an autumn salad.
Turns out that was a tasty decision!
This Autumn Apple Salad is colorful and full of flavor – and so easy to put together!
INGREDIENTS:
Baby Lettuce
Cucumber (I used a lemon cucumber because I love them so much!)
Apple
Dried Cranberries
Roasted Pecans
Feta Cheese
Grated Carrots
Roasted Pork Loin
DIRECTIONS:
Wash, peel and slice cucumber. Set aside. Wash, core and slice apple. Set aside.
Slice pork loin into strips or bite-sized pieces. Set aside.
You can either plate the salads or allow individuals to build their own. Layer the lettuce on the bottom, add the toppings, then finish with a vinaigrette dressing (or your favorite). I used an aged balsamic vinaigrette and it was yummy!
