I love meals that are easy to throw together in one pan, like this tasty autumn sausage bake. It is full of flavors and textures – and bacon makes everything wonderful!
I first enjoyed this last year at a friend’s home. She was sweet and shared the recipe with me. I made a few tweaks to make it more appealing to the picky eater in my household, and we really enjoy it.
INGREDIENTS:
1 sausage (we like Hillshire Farms Beef Smoked Sausage)
1 large apple (we use honey crisp)
1 butternut squash
1 zucchini
1 cauliflower
1 broccoli floret
1 pound bacon
2 tablespoons seasoning (I use a blend of Mrs. Dash, onion flakes, and parsley flakes)
1/3 cup olive oil
DIRECTIONS:
Preheat oven to 425 degrees.
Line an XL baking sheet or two medium baking sheets with foil. Set aside.
Slice sausage into 1-inch rounds (or bite-sized pieces) and set aside.
Chop bacon into small pieces. Spread it out on the baking sheet and cook for 8 minutes.
While the bacon is cooking, wash veggies and apple. Peel squash and cut into cubes. Cut the rest of the veggies and apple into bite-sized pieces. Mix together with oil and seasonings.
Remove bacon from oven and toss sausage and veggies with bacon, coating with bacon fat (because bacon makes everything delicious!).
Return the pan to the oven and bake 20 minutes. If the veggies aren’t as tender as you like, or the bacon isnt’ as crispy, cook an additional five minutes.
Serve with warm bread and you have a perfect autumn meal!

This is just what I have been looking for! Easy recipe and you can add more or less of the vegetables. It’s just me and my husband and I have run out of ideas for new meals. We eat two meals each day and this looks delicious. Thanks for sharing!!
