One day I needed an recipe for a potluck with a “green” theme, so I decided to make something with avocados. That turned out to be quite a tasty decision!
If you use pre-cooked chicken (rotisserie chicken from the deli is great!), it just takes a few minutes to assemble these and you have a whole meal ready to enjoy!
1 cups cooked chicken
1/2 cup celery, thinly sliced
1/2 cup grapes, halved
1/4 cup cashew halves or pieces
2 ripe avocados
2 tablespoons mayonnaise
Cut chicken into cubes or bite-sized pieces. Combine with celery, nuts, and grapes. Mix with mayo. Salt to taste.
Cut avocados in half. Discard pit. If you want the “boats” to be deeper, you can spoon out part of the avocado, otherwise spoon filling into the boat.
Chill until ready to serve.
