Banana Custard

Captain Cavedweller is a big fan of banana-flavored treats, so I’m often on the lookout for banana recipes. He also loves baked custard, so when I found this recipe, I knew I had to give it a try.

 

 

This was easy to make and CC loved it. I think I prefer plain custard better, but it was good.

INGREDIENTS:

3 eggs

1  cup evaporated milk (you can use regular milk too)

1/3 cup sugar

1 teaspoon vanilla extract

1 teaspoon banana extract

1 ripe banana, mashed

DIRECTIONS:

Preheat oven to 325 degrees.

Beat eggs until well combined but not foamy. Add in remaining ingredients and mix until combined.

Using an 8×8 glass baking pan, place in four custard cups (or ramekins or small oven-safe bowls). Pour boiling water into pan until it is standing about 1 inch.

Pour batter into custard cups and then carefully place pan in the oven. Bake about 35-40 minutes, or until a knife inserted in the center of a custard cup comes out clean.

We like to sprinkle cinnamon on top of the custard just before baking.
