Caramel Bars

 

Ingredients:

Crust

1/2 cup butter

1/2 cup brown sugar (packed)

1 cup flour

Filling

1 bag of caramel bits

1 tablespoon heavy cream

Topping

2 eggs

1 cup brown sugar (packed)

1 teaspoon vanilla

2 tablespoons flour

1 teaspoon baking powder

1/2 teaspoon salt

 

Directions:

Preheat oven to 350 degrees.

Melt butter then stir in sugar and flour. Press into the bottom of an 11×13 baking pan that has been sprayed with non-stick spray. Use the back of a spoon to firmly the crust. Bake 10 minutes.

While it is baking, combine flour, baking powder and salt. Set aside. In a mixing bowl, lightly beat eggs then add sugar and vanilla, stirring until combined. Add in dry ingredients. Set aside.

Just before the crust is ready to remove from the oven, melt caramel bits and cream in a microwave safe bowl. Warm in 30 second increments. It generally takes about a 1 1/2 minutes to completely melt.

Remove crust from oven, pour caramel over the top, then pour topping over the caramel. Return to the oven and bake an additional 25-28 minutes, until caramel is set.

Remove from oven and cool completely, then cut into bars and serve. Will keep in an air-tight container for about five days or these may also be frozen.

Yield: approximately 30 bars

    I can’t tell you how much I appreciate your posted recipes. Thank you so much! I have just printed off the Carmel Bars. I love, love Carmel and can’t wait to try but I was wondering, how much is in a bag of Carmel bits. Are you talking Kraft Caramels? Or another brand? I am from Canada and I buy McCormick’s Toffee’s but don’t know what you are referencing. Many thanks for your reply.
