Chicken Bacon Summer Salad

There are times when (like when it is 105 degrees outside) that nothing sounds good for dinner except a fresh green salad.

Of course, with a hungry cavedweller in the house, the salad must have plenty of meat, but this easy recipe just takes a few minutes to assemble.

I used this recipe in Rescuing the Rancher. 

The neat part was that the hero made it for the heroine for dinner. How fun is that!

Enjoy Nate’s chicken bacon summer salad recipe!

Ingredients:

1 head of Romaine lettuce, chopped

6 slices bacon, cooked and diced

2 cups chicken, cooked and diced

1 cup halved cherry tomatoes

1/4 cup sliced black olives

1 cucumber, peeled and sliced

1 avocado, peeled and pitted, then diced

1/4 cup salad dressing

(NOTE: If you have a favorite dressing, like ranch, use it. Or you can mix 1/4 cup olive oil, 1/4 cup balsamic vinegar, 1 clove of minced garlic, 2 teaspoons Dijon mustard, and 1 teaspoon Italian dry season. Combine in a jar and shake well before serving.)

Directions:

Combine all ingredients. Toss with dressing. Serve and enjoy!
