In Catching the Cowboy, Nell Cole, also known as Grammy, is a wonderful cook. She’s always baking or making something delicious in her kitchen at Summer Creek Ranch. Her character is inspired by Captain Cavedweller’s Grandma Nell, who was a wonderful cook. She even worked as the cook at a dude ranch in Wyoming for many summers.
Today, I hope you’ll enjoy this tasty muffin recipe Nell makes in the story.
Ingredients:
2 3/4 cups all-purpose flour
1 tablespoon baking powder
1 1/4 teaspoons baking soda
1/2 teaspoon salt
1/2 cup butter, softened
1 1/4 cups sugar
3 large eggs
1/2 cup milk
3 teaspoons vanilla extract
2 1/4 cups semi sweet chocolate chips
1 tablespoon raw (Turbinado) sugar
Directions:
Preheat the oven to 425 degrees F.
Coat a muffin pan with non-stick cooking spray. Be sure to coat the top, not just the cups. Place paper or silicone cupcake liners into each cup. Set aside.
Combine dry ingredients in a medium bowl and stir until everything is combined. Add in two cups of chocolate chips.
In a separate bowl, lightly beat the eggs, until they are broken down. Add in milk and vanilla, stirring until combined.
Pour the egg mixture into the dry ingredients, gently stirring until just combined. Do not over mix or the muffins will become heavy and tough.
Scoop batter evenly into each muffin cup. Sprinkle the tops of the batter with the remaining chocolate chips and the raw sugar.
Bake for seven minutes at 425 then reduce the heat to 375 and bake an additional 15 minutes, until a toothpick inserted comes out clean.
Remove from the oven and cool muffins in the pan for 5-10 minutes before turning out on a clean surface. Serve and enjoy!
