Eggnog Bread


If you like moist, easy quick bread, give this flavorful option a try! Captain Cavedweller gave it his stamp of approval!

INGREDIENTS:

1 1/2 cups flour

3/4 teaspoon baking soda

1/2 teaspoon baking powder

1 teaspoon ground cinnamon

1 teaspoon ground nutmeg

1/4 teaspoon salt

4 tablespoons melted butter

1/2 cup granulated sugar

1 egg

1 1/2 cups eggnog

1 teaspoon vanilla extract

GLAZE:

1 cup powered sugar

1/4 cup eggnog

1 tablespoon butter, melted

DIRECTIONS:

Preheat oven to 375.

Grease two 8-inch loaf pans.

In a medium bowl, combine flour, baking soda, baking powder, salt, cinnamon and nutmeg. Set aside.

In another bowl, mix butter and sugar. Add egg and vanilla, blending until smooth. Add flour mixture to egg mixture, a little at a time, alternating with eggnog. Mix just until blended.

Pour into prepared pans and bake for 50-60 minutes, until toothpick inserted in center comes out clean.

Cool completely.

For glaze, mix butter, eggnog, and powdered sugar. If too thick to pour, add more eggnog. If too thin, add more sugar. Pour on top of bread.

If desired dust with nutmeg.
