Festive Brownie Bites

A friend came over for lunch a few weekends ago and I needed something delicious, pretty, and super easy to serve for dessert.

This recipe fit the bill, and was so good!

If you want, you can make the brownie bites from scratch and not take shortcuts like I did, but if you are in a rush, you can assemble this dessert in a matter of minutes!

 

INGREDIENTS

4 dozen brownie bites

1 cup Raspberry Jam

1 8-ounce package softened cream cheese

1/2 cup powdered sugar

1 teaspoon vanilla extract

1 cup chocolate ganache or chocolate frosting

fresh raspberries

mint leaves

DIRECTIONS

Combine softened cream cheese with powdered sugar and vanilla extract.  (If you are in a really big hurry, use cream cheese spread and stir jam into).

Turn a brownie bite upside down. Spread with a thin layer of jam. Add a layer of cream cheese filling, then another layer of jam. Top with a right-side-up brownie bite.  Continue until you have filling in all the brownie bites.

Arrange on a serving dish or platter.

Use chocolate ganache or frosting to top bites. I warmed mine in the microwave for about twenty seconds to get it so it would pour and topped the bites.

When ready to serve, add a raspberry and mint leaves for garnish.

Keep refrigerated.

YIELDS: 24 servings
