National Husband Appreciation Day!

Today is National Husband Appreciation Day! Woohoo!

Thank you to all the husbands out there who are just great guys.

Thank you for changing our tires and the furnace air filters. Thank you for mowing the grass, edging the lawn, and spraying the weeds (even when it sends your allergies into orbit). Thank you for running to the store on your way home, for bringing home dinner when us girls are too tired to cook. Thank you for putting up with our rampant emotions, interruptions during football games, and our ongoing need to update your wardrobe. Thank you for loving us, supporting us, encouraging us, and being present for us every day.

One of the easiest ways for me to show appreciation to Captain Cavedweller is with food. He’s a picky eater and there are certain things he absolutely loves. So when I make one of his favorites, he knows I’m thinking of him and it’s my way of saying thanks for being awesome.

In fact, I’m going to be whipping up a batch of dill pickle dip for him to enjoy. He used to buy at the grocery store all the time when he first married, but no one makes it anymore, or if they do, it’s impossible to find.

Here’s the easy recipe if you want to give it a try!

Ingredients:
2 cups of Nalley Dill hamburger chips, drained and blotted dry
2-3 tablespoons pickle juice
1 cup sour cream
3 tablespoons mayonnaise
2 teaspoons Worcestershire sauce
Directions:
Drain juice from pickles, set aside. Place pickles on paper towels, blotting dry (if they aren’t dry, your dip will be runny). Pulse them in the food processor to chop or chop by hand.
Mix pickles, sour cream, mayonnaise and Worcestershire sauce. Slowly add pickle juice until dip is a good consistency. The more juice you add, the better the pickle flavor – just don’t overdo or you’ll have runny dip.
Serve with potato chips or crackers.
Refrigerate any leftovers.
Makes approximately 1 1/2 cups of dip.
