In my Summer Creek sweet romance series, Nell Cole is the glue that really holds the family together. She can work all day on the ranch, and then whip a fabulous, filling meal.
In Rescuing the Rancher, Nell makes some yummy creations, like these delicious peach muffins!
Peach Muffins
Ingredients:
1 1/4 cup flour
1 1/2 teaspoons baking powder
1/2 teaspoon salt
1 teaspoon cinnamon
2/3 cup white sugar
2 cups peaches
1/2 cup milk
1 egg
1/4 cup vegetable oil
Powdered sugar
Directions:
Preheat oven to 350 degrees.
Prepare a muffin tin by spraying it with non-stick spray or inserting paper liners.
Mix flour, baking powder, salt, cinnamon, and white sugar together.
You may use fresh or canned peaches. If using canned, drain the juice. If fresh, peel and pit. Then chop into small pieces. Stir into the flour mixture. Add the milk, egg and oil, stirring until batter is moistened.
Portion the batter evenly into the muffin cups, filling them about 3/4 full. Bake until golden brown, about twenty minutes or until a toothpick inserted inside the middle of one comes out clean. Remove from oven and dust with powered sugar before serving. Delicious when served warm!

Looks delicious! Going to try them soon. Got the peaches today. Like that I can use canned peaches, and I am going to try some frozen fruit I have in freezer too!
