Pumpkin Bars

INGREDIENTS:

1 pumpkin cake mix

1/2 cup butter, softened

2 eggs

1 teaspoon cinnamon

1 teaspoon pumpkin concentrate

1 11-ounce bag of pumpkin chips

Candied pecans

Pumpkin spice finishing sugar

Frosting

2 cups powdered sugar

4 ounces cream cheese, softened

1/4 cup butter, softened

1 teaspoon vanilla

DIRECTIONS:

Preheat oven to 350 F.

Line an 8×8 baking pan with parchment paper, then spray with non-stick cooking spray. Set aside.

Combine cake mix, with softened butter, eggs, cinnamon, and pumpkin concentrate until just combined. Dough will be thick. Stir in chips.

Spread into prepared baking pan and bake for about 20 minutes, until edges are beginning to pull away from the pan, and a toothpick inserted in the center comes out clean.

Remove from oven and allow to cool completely.

Top with Cream Cheese Frosting. (To make frosting, combine cream cheese, powdered sugar, butter, and vanilla, mixing until creamy and smooth. )

Use the parchment to lift the bars from the pan, then cut into sixteen squares. Top each square with a pecan piece, then add a sprinkle of finish sugar.

If you have any leftovers, store in an airtight container in the fridge, or freeze.

Yield: 16 bars.
