In my sweet romance Moonlight Cove, I have Brenley grandmother make starfish cookies that are more like a candy than anything else.
After I worked that into the story, I decided I better come up with a recipe to go along with it. You’ll also find the recipe at the book of the story.
I hope you enjoy these simple, sweet treats!
To make these, I used a starfish mold I purchased from Amazon. You cane make these without a mold and just drop spoonsful on a piece of parchment or a greased baking sheet.
INGREDIENTS
1 bag peanut butter chips
6 ounces white melting wafers
1 cup Rice Chex cereal
1 cup pretzels
DIRECTIONS
Crush cereal and pretzels into teeny little pieces. Set aside.
Melt peanut butter chips and wafers in a microwave-safe bowl. Start with 30 seconds, stir, then continue in 30-second intervals until melted. Do not overheat!
Stir crushed cereal and pretzels into melted peanut butter mixture. Immediately spoon into molds or drop by spoonsful onto parchment sheet. If using molds, freeze them for about 10 minutes, then unmold.
If desired, you can melt some chocolate chips or chocolate wafers and drizzle over starfish (or blobs).
Super easy, and super yummy if you are a peanut butter fan!
Store in an airtight container for up to a week.
