I needed to make a dessert for a potluck and wanted something like a brownie or bar-cookie. Since I had a box of strawberry cake mix on hand, I wondered if it was possible to turn it into brownies.
It totally was!
And they are so, so yummy! The white chocolate and fresh berries really add to the flavor! Enjoy!
Ingredients:
1 box of Strawberry Cake Mix
2 eggs
1/3 cup vegetable oil
1 teaspoon of strawberry extract
1 cup strawberries
1 cup white chocolate
Glaze
1 cup powdered sugar
1 teaspoon vanilla or strawberry extract
1-2 tablespoons of milk or water
Directions:
Preheat the oven to 350 degrees.
Line an 8-inch square pan with parchment paper, and spray with non-stick cooking spray.
Cut berries into bite-sized pieces. Chop chocolate into small pieces.
Mix cake mix, eggs, oil, extract, berries and chocolate until well combined.
Spread batter evenly into pan. Bake for 15 -20 minutes, until just set. Do not overcook!
Allow to cool for 15 minutes, then lift the parchment from the pan.
Mix powdered sugar, extract, and milk. Pour over the brownies, spreading to edges. Allow to cool completely before cutting into squares.
Dust with powdered sugar (if desired) and top with slices of strawberries.
Yield: 16 brownies
