Not only is it Taco Tuesday – today is also Cinco De Mayo. I know celebrations this year will be different than in the past, but that doesn’t mean you can’t enjoy a great meal.
Here’s a simple recipe for delicious tacos!
Ingredients:
1 tablespoon olive oil
1 pound lean ground beef
salt
2 teaspoons minced garlic
2 teaspoons chili powder
1 teaspoon onion powder
1/2 cup tomato paste
1/2 cup chicken broth
corn tortillas
1 cup shredded cheddar jack cheese
1 cup tomatoes, diced
2 cups shredded lettuce
Directions:
Heat oil in a heavy skillet. Add ground beef, salt, garlic and spices. Cook until meat is no longer pink, about 5-7 minutes, stirring and flipping until lightly browned on all sides. Add tomato paste and broth, simmer on low heat until thickened. Serve warm over warmed tortilla shells with toppings. To warm tortillas, you can fry them or simply place on a baking sheet in a 350 degree oven for just a minute or two.
