Winter Pomegranate Salad

After all the calorie-laden treats of the holidays, I’m ready for some healthier eating.

I love a good salad and this one is great for winter eating. It’s simple, easy to make, and full of great flavors!

Pomegranate Salad

Ingredients:

2 cups baby lettuce (washed)

1/4 cup pomegranate seeds

1/2 cup feta cheese (crumbled)

1 cup diced chicken (cooked)

1/2 cup roasted pecans

balsamic vinegar

salt to taste

Directions:

Combine lettuce, pomegranate seeds, feta cheese, chicken and pecans. Toss to coat with vinegar and salt. Serve.

Makes two large servings or four small servings.
