A few weeks ago, I needed a dessert for a gathering and decided to give zucchini bars a try. Oh, my gracious!
These bars were so incredibly moist and tender, and bursting with delicious autumn flavor (thanks to the additional of pumpkin pie spice!).
Top with glazed or candied pecans for a perfectly wonderful treat!
Ingredients:
1⅓ cups packed brown sugar
½ cup butter, softened
2 eggs
1 teaspoon vanilla extract
2 cups all-purpose flour
2 teaspoons baking soda
1 teaspoon ground cinnamon
1 teaspoon pumpkin pie spice
2 cups shredded zucchini
2 cups cream cheese frosting
Glazed or candied pecans (optional)
Directions:
Preheat oven to 350 degrees F.
Butter a 9×13-inch baking pan, set aside.
Beat brown sugar, butter, eggs, and vanilla extract together for two minutes. Stir in cinnamon and spice. Add flour and baking soda. Stir in zucchini.
Spread batter into the prepared baking pan. Bake until a toothpick inserted in the center comes out clean, about 20-25 minutes. Allow to cool completely before frosting, about 1 hour.
Frost with cream cheese frosting. Accent with candied or glazed pecans (you may use walnuts instead of pecans).
Cut into bars and serve. If you have any leftovers, refrigerate.
Yield: approximately 20 bars
